The launch of Estiatorio Milos on Regent Street St James’s this month shines a spotlight on Greek cuisine, and in particular its focus on fish and seafood. Owned by Greek restaurateur Costas Spiliadis, the restaurant has just opened booking lines for dates after July 30, and expectations are high. Spiliadis’s reputation for creating elegant, vibrant Mediterranean cuisine dates back to 1979, when he opened his first restaurant in Montreal. He now has outposts in New York, Athens, Las Vegas and Miami. This latest venture, clad in white marble sourced from the Penteli Mountains just outside Athens, is one of the most anticipated UK restaurant openings of 2015. The London “Milos”, as it is colloquially known, will have a daily delivery of fresh fish from Greece and the Mediterranean as well as closer to home, such as Scottish langoustine.
