    Pastaio

    Stevie Parle, the chef behind Rotorino, Palatino and Dock Kitchen has opened a new restaurant in a prime central location at 19 Ganton Street, Soho. Pastaio, meaning someone who makes pasta by hand in Italian, opened its doors last month and its entire focus is on fresh, handmade pasta, hence the name.

    “Over the last few years at Rotorino and Palatino we’ve managed to make fresh pasta consistently and fast” say’s Stevie Parle, who has been obsessed with making fresh pasta since he learned to cook. At Pastaio the idea is that portions are reasonable and affordable, there is a short menu of offering seasonal pasta dishes and although the pasta may be made in a traditional fashion, there are several less classic options for you to try. Included in these are tonnarelli cacio e pepe served with bucatini, potato and gravy ravioli, grouse, rabbit and pork agnoli and long fusilli, crab courgette.

    Also available is a selection of smaller antipasti dishes, including the fried mozzarella ‘nduja and honey sandwich, cured meats and anchovy-stuffed pepperoncini. There will be plenty of prosecco and Aperol spritz- inspired slushies alongside Italian cocktails, wines, spirits and beers.

    The restaurant seats 70 people at communal terrazzo tables will feature colourful murals designed with an informal boisterous feel that is similar to Padella. Stevie Parle has worked closely with Tom Dixon’s Design Research Studio to create a contemporary, vibey and fun space and atmosphere.
