Michelin-starred restaurateur David Moore is advising businessman Elio Machillanda and his wife Claudia on their new Champagne and informal dining concept, Tirage, which is launching in the City.
Tirage is set to open in Hasilwood House, 64 Bishopsgate, London EC4 in November.
It will serve Champagne, and sparkling wine, along with a menu of tasting plates.
The 4,201 sq foot site, will seat 154 covers across two floors, including two private rooms (one sponsored by Perrier Jouët) and three semi-private areas. It has taken an assignment of the lease which expires in 2031 from Chez Gerard. The rent was not disclosed.
Head Sommelier, and Decanter World Wine Awards judge, Roberto Della Pietra, whose has previously worked at Roussillon Restaurant in Pimlico, Gauthier Soho, and John Burton-Race’s L’Ortolan in Shinfield, has selected the 120-strong sparkling wine and Champagne list.
Dining will combine French cuisine with the palate of Peru. The Head Chef is Alasdair Fraser formerly of The Abingdon, in Kensington.
David Rawlinson director of Restaurant Property who brokered the deal said: “The elegant but fun blend of champagne and tapas is a great offer that should trade very well from this City location.”
